The Role of Salt in Obesity Development
Purpose:
Modern diets high in sugar and fat have contributed significantly to the prevalence of obesity. However, tackling obesity by lowering dietary fat content in our diets has not succeeded to the degree that we expected. As a result, obesity is on the rise. Recently, my team has discovered that high salt intake, often present in a high fat diet, could be a key and overlooked factor that potentially contributes to the development and progression of obesity, especially combined with high fat feeding.
