Purpose:
Kingston Estate Wines Pty Ltd’s project allows for the installation of 94 air injection rings and infrastructure to aid in red fermentation processing. Air facilitates the breakup of the cap of skins formed in ferments, allowing efficient skin removal during the draining phase of ferment pressing. Press downtime is subsequently reduced allowing for an increased capacity of approximately 45%. This capacity increase will allow an increase in red grape crush of 70% using current equipment. This capacity increase without the air injection would require a capital investment of over $1.2M through press hardware purchases.
